ONION TART
A great addition to picnic hampers, this French tart is simple to prepare and very tasty. A traditional Provençal recipe, this version features homemade pastry and anchovy paste in place of anchovy fillets.
SERVES 6â8
2 tablespoons anchovy paste
125 ml (4 fl oz/½ cup) olive oil
6 large onions, peeled and thinly sliced
2 garlic cloves, peeled but kept whole
1 bouquet garni
100 g (3½ oz) niçoise olives
FOR THE DOUGH
125 ml (4 fl oz/½ cup) milk
30 g (1 oz) fresh yeast
60 ml (2 fl oz/¼ cup) olive oil
300 g (10½ oz/2 cups) plain (all-purpose) flour
